It's Sunday morning and we are planning a long hike through the sand dunes in the National Seashore today so we need a hearty start to our day and this granola recipe is just the ticket!  If you have stayed with us then you know how delicious this is, whether sprinkled over fresh Greek yogurt or simply in a bowl with milk this granola recipe is easy, healthy and delicious.  You can make this in advance and give your holiday visitors a delicious and wholesome start to their days.

CRANBERRY NUT GRANOLA

3 cups Rolled Oats
3/4 cup melted butter or virgin coconut oil
1 cup Light Brown Sugar
1 ½ cups. Unsweetened Coconut Flakes
1 cup Maple Syrup
1 cup Pecans

½ cup Unsalted Pepitas (Pumpkin Seeds)

½ cup Unsalted Sunflower Seeds
½ cup Dried Cranberries
 

Preheat oven to 300 degrees.

 

Toss all ingredients except dried fruit in large bowl.  Spread mixture on a sheet pan and bake for 1 hour.  Turn off the oven and let the granola mixture stand in the oven for one additional hour. Remove from oven and add dried fruit.  Mix well and cool completely.  Granola should be stored in a airtight container and will last for a week of more (if you haven’t eaten all of it the first day!).
